Food is your friend...not your enemy!

This blog is dedicated to the "Hungry Dieter" who starves themselves of food, passion, happiness and health.....I created this blog because I truly believe that in my quest for Health, Beauty and Happiness, I don't need to starve or deprive myself of the foods that I love and enjoy. Everything is ok in moderation right?
Being an avid "foodie" I am always on the search for the best tastes and flavors....I love to cook and found that with a lot of the "diet" programs which I have unsuccessfully tried, I was deprived of what I call FLAVORFUL Nirvana; depriving my taste buds...which of course was offensive...grrrrr! I was so tired of saying "no, I can't have that" Instead I am determined to be able to eat the foods that I love with no shame or guilt!
I want to share recipes and my journey through Stuffing MYSELF Thin with all of you...not only to just share but to maybe inspire a new way of thinking, feeling, and LIVING....let's make a lifestyle change into Healthy Eating (without the bland, boring foods that are attached to DIETING) and committ to not compromising our tastebuds any longer....banish the thought!!!!!

Stuff Your Face!


Okay so here is the recipe for a dinner that I had with two of my dearest friends last Friday Night (insert Katy Perry Song here)....It was so delicious and super easy and fast to prepare. I call it Mexican Done Smart!
Tilapia Tacos
serving size for 4
Ingriedients:
4 Tilapia Filets (Because I am on a budget I purchased frozen Tilapia filets from Safeway...they have them in the seafood section....plus each on is individually wrapped so you can use them even for one serving)
1 cup of finely cut Cilantro
2 large Roma Tomatoes diced
1/2 Red Onion diced finely
2 Limes
1 Jalepeno finely chopped (optional)
8 White Corn Tortillas (I like to get the ones that are handmade in the tortilla section...they usually come in a pack of 8....you can even find organic ones if your budget allows)
Kosher Salt and Pepper to taste
Tapatio (optional)
I like to season my Tilapia filets with a little Kosher Salt and Pepper to begin with.....I am a big fan of steamed fish so I use the Ziploc Zip and Steam Bags to do just this! Whether the filets are still frozen fresh you can season them, stick them in the bag and then pop them in the microwave for 3-4mins.....Yes its that quick! While your filets are steaming away, take non-stick pan and start heating up your tortillas....heat each side for a about a minute...to keep the tortillas hot you can place them in between a kitchen towel and keep them covered up! (thanks Jodee for showing me that little trick!) Once your filets are all steamed and out of the microwave transfer them to a plate.....I like to lightly flake the fish with a fork leaving some bigger chunks so it looks bountiful! Put some tilapia on each tortilla.....the ratio of tilapia to tortilla should be one filet for every two tortillas! Top with cilantro, tomato, and red onion (jalapeno for you all liking to add some spice to hike up that metabolism). Top with a couple dashes of Tapatio and a squeeze of lime wedge and Voila! Fish Tacos are Done!
I like to serve my fish tacos with either a side saladw/vinagarette dressing and vegetables! You can also add some black beans for fiber and if you do....portion out 1/2 cup per person! You can also chicken instead of fish...and yes even those can be steamed in the Zip and Steam Bags!
